This is again one of our favorite Hungarian vegetable soups. Gentle flavor, very delicious...You will need (for about 5 servings):
- 1 small cauliflower head
- 1 green pepper (optional)
- 2 medium carrots
- a bunch of parsley (can also use dried)
- 2 teaspoons seasoning mix, such as Vegeta
- salt to taste
- 1,5 heaped tablespoons of flour
- 2 tablespoons of sunflower oil
- 175 ml sour cream (20%)
- 2.5 liters of water
For the dumplings (galuska):
- 1 egg
- 2 heaped tablespoons of flour
- a pinch of salt
- a little bit of water, if necessary
Preparation:
- Clean the carrots and cut into peaces
- Clean and cut cauliflower, slice green pepper, chop the parsley.
- Start to cook carrots in 2.5 liter of water, cook on a low heat for about 20 minutes, then add cauliflower and green pepper, sprinkle Vegeta and salt.
- When the vegetables are tender, it's time to add some thickness. Fry the flour in a pan with oil. Sprinkle the chopped parsley, pour some cold water (about 100 ml), if you want, you can pour the sour cream in this stage (or in step 6), mix, then add this mass into the soup and boil for a few minutes.
- Prepare the dumplings: mix the flour, eggs and salt. Make the dumplings as explained here.
- When the dumplings come up to the surface of the soup, add the sour cream and boil.
