Delicate cupcakes with apples and coconut crust

Those apple cupcakes were admired by everyone who tried them... :) I recommend it for you as well!
Recipe found at AJ-receptai. Cupcakes were fantastic or divine, or perfect, or at a high level or you will find yourself in a cupcake paradise when you'll eat them... :)

From these ingredients you can make about 16 cupcakes. I use cupcake baking tray and insert paper forms inside.

For an apple dough you'll need:
  • 150 grams of soft butter
  • 120 grams of sugar
  • 2 eggs
  • a dash of salt
  • 150 grams of flour
  • 1 teaspoon of baking powder
  • 50 ml of milk
  • 3 big apples
For the coconut crust you'll need:
  • 90 grams of shredded coconut
  • 75 grams of flour
  • 60 grams of brown sugar (can use white)
  • 50 grams of soft butter
  • 1/3 of a teaspoon of cinnamon
Preparation:
  1. First prepare the apple mass. Whip the butter with sugar and salt until fluffy. Add eggs one at a time and whip for about 1 minute after each egg. Mix flour with baking powder and sift. Add it to the butter mass and mix carefully with a spoon. Pour the milk in and mix once more. Cut apples into small cubes and add them into the butter mass, mix together.
  2. Prepare the coconut mass. In a bowl mix all dry ingredients. Add butter and rub the dough by hand until moist crumbs are formed.
  3. Fill 2/3 of a cupcake form with an apple dough, cover it with coconut crumbs.
  4. Bake in the oven preheated to 190 C for about 20-30 minutes, until nicely brown.
