Potato pancakes with parsley

I always wanted to try pancakes from coarsely grated potatoes and here it is... :)
The taste reminded more of  the baked potatoes, when they are cut finely and roasted well.

You will need:
  • 10 potatoes
  • 1 big onion
  • 1 clove of garlic
  • 1 tablespoon of salt or to taste
  • ground black pepper
  • 1 egg
  • flour, about a handful
  • a bunch of parsley
  • oil for baking
Preparation:
  1. Grate potatoes coarsely, wait for about 15 minutes till the water starts to separate.
  2. Mince or crush the onion and garlic.
  3. Squeeze the water out of the potatoes. I used the stiff gauze. It can also be done by hand.
  4. Add the onion, garlic, salt, pepper, egg and finely chopped parsley into potatoes, mix. Add a little bit of flour, just that it would be enough to hold the potato together.
  5. Bake in a pan with oil.
Enjoy!
Here my potatoes were grated very coarsely. I don't have the middle size grating disc, so next time I will also try to grate them finely.
