Chicken cutlets with cheese

These soft chicken cutlets are truly delicious... I strongly recommend.

You will need:
  • 500-600 grams of chicken fillet
  • 150 grams of good fermented cheese, ground
  • garlic
  • salt
  • black ground pepper
  • herbs for meat
  • 3 eggs
  • 3 tablespoons of mayonnaise
  • 3-4 tablespoons of flour
  • oil for baking
Preparation:
  1. Cut chicken into palm-size pieces, slightly beat them with a meat hammer. Season with mashed garlic, herbs and leave for an hour to rest.
  2. Beat the eggs, mix the mayonnaise in, add some salt and pepper (not too much of salt, because mayonnaise and cheese are also salty). Add some flour. The dough must be just a little bit thicker than that for pancakes.
  3. Preheat the oil in the pan. Soak one side of the chicken in the dough and put (with that side down) in the pan. While one side is baking, put some fermented cheese on top of the other side and pour a spoonful of dough on it (so that it would cover the cheese). Carefully flip the cutlet and bake the other side.
